On Saturday, The Little Emperor turned 3, so Hazel baked him a cake. It was heavenly! Here is the recipe she used for all the little bakers out there!
FOR THE CAKE
Ingredients
250g (9 oz) plain flour
400g (14 oz) mixture of golden caster sugar and dark brown sugar
75g (3 oz) cocoa powder
1 dessertspoon bicarbonate of soda
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
225ml (8 fl oz) cold filter coffee
225ml (8 fl oz) condensed milk
100ml (4 fl oz) clarified butter
Preparation method
Preheat oven to 180 C / Gas mark 4. Grease and flour a 23x33cm (9x13 in) baking tin.
In a large bowl, combine the flour, sugar, cocoa, bicarb, baking powder and salt. Make a well in the centre and pour in the eggs, coffee, milk and butter. Mix until smooth, batter will be thin. Pour into prepared tin.
Bake in the preheated oven for 35 to 40 minutes, or until a cocktail stick inserted into the centre of the cake comes out clean. Allow to cool in the tin before slicing and serving.
FOR THE ICING
Lots of dark chocolate, melted
Lots of butter, softened
Equal measures of icing sugar and caster sugar
Condensed milk to smooth it all out
Couple of teaspoons of vanilla bean paste
Loads of Golden Syrup
Mix it all up till you get to a toothpaste kind of consistency and away you go!
